After roasting, coffee beans release carbon dioxide, a process called degassing. Allow the roasted beans to rest for 24-48 hours in a vented container before brewing to ensure optimal flavor. Typically a week after roasting is where we have found coffee tastes reflect their potential taste profile characteristics.
For storage, keep your beans in an airtight container away from light and moisture. Avoid grinding your beans until you are ready to brew, as pre-ground coffee loses its flavor quickly. We use a 15 minute window as a guide. No more than 15 minutes between grinding and brewing.
